Mediterranean Chickpea Salad

Something healthy and filling and nutritious. I love this salad a lot. It has protein, fiber, vitamins, calcium, I think a complete meal in form of a salad. Very well thought one. Thanks to the chickpeas, this salad will keep us full for hours. Leafy green salads are sometimes not satisfying, sorry no offense KALE ;)
Chickpeas are so versatile. Can be used in many forms. But, I never thought some people can drink chickpea coffee. Came to know yesterday only. I tried that too, made that coffee at home, tried, liked it as cold coffee but hot one was kind of okay. In hot one, while taking a sip, I smell burnt chickpeas but once its in my mouth, it tasted perfect. I liked cold one, because there wasn't any hot steam coming so no smell, only good taste. I don't know why I am writing so much about chickpea coffee here. Let's get back to Salad.
I don't like olives, so I added Avocado instead. Another delicacy which is so versatile, can fit anywhere. Yes, I am talking about avocado. :)
Before starting to write about this recipe, I was thinking what am I going to write today, I actually don't have anything much to say here today. But, looks like I am writing an essay here. I think I should right all my recipes only when I am completely relaxed and no one is around to disturb me. Today coincidentally, My husband took turn to put our son to bed, you know night time schedule, tell story or read a book, and he listens to hanuman chalisa every night. So, I got time to write an essay here.
Enough about me, let's get back to our recipe.


Ingredients:

  • 1 cup of boiled chickpeas
  • 1 small-medium cucumber
  • 1/4th bell pepper or capsicum [optional, if you don't like its taste, avoid it]
  • 1/2 red onion
  • 2 red tomatoes
  • 1/4th cup chopped parsley
  • 1/2 avocado
  • 2 tbsp crumbled feta cheese
  • Salt
  • Black pepper
  • 3 tbsp extra virgin olive oil
  • 1 tbsp white wine vinegar [if not available use normal vinegar]
  • 1.5 tbsp lemon juice [add more if you like sour taste]
  • Some red pepper flakes
How To:
  1. Chop cucumber, onion, tomatoes, bell pepper and avocado in same size. 
  2. In a big bowl, toss together, chickpeas, onions, tomatoes, cucumbers, avocado, capsicum, parsley, crumbled feta cheese, some salt and black pepper.
  3. In a small container, Mix, olive oil, vinegar, red chilly flakes, lemon juice together.
  4. Before serving, dress salad with this vinaigrette mix. Enjoy.
