Of course each recipe needs a little bit of twist as per our taste buds. I have what we say in India "Chatorey" taste buds. Food has to taste spicy, sour, sweet, salty, crunchy all at the same time. Basically burst of flavors inside mouth. And Mexicans are really good at it too. They have so many common ingredients, yet such delicious different ways to use them. By look you may think its our green chutney but its totally different in taste. They have 2-3 such sauces which looks like green chutney but they all taste so different. Similarly, they create many such unique sauces and recipes which taste amazing. Like burst of flavors. tostadas is one of them.
Tostadas, easy to make, loaded with black or red kidney beans, tomatoes and many more veggies, crispy flat taco base, some cheese, some lime and yes sauce!! Meat or no meat your choice. I make without any meat and they taste super delicious.
Ingredients:
- Tostadas shells, can buy crispy one or if you have soft tortillas, bake them to make them crispy
- 1 Cup red or black beans (soak them overnight or 8 hrs. and boil them)
- 2 cups of chopped iceberg lettuce
- 2 avocados chopped in small cubes
- 2 tomatoes chopped in small cubes
- grated cheese pf your choice
- 1/2 onion, finely chopped
- Salt
- Green chillies
- Mint
- Oregano
- Red Chili flakes
- Cumin powder
- Coriander leaves
- 1 big tomato puree
- 1 tbsp oil
- 1 tbsp mayo
- 1 cup in total Red, yellow, green pepper, chopped in cubes
- 1/2 cup Boil corn kernels
- 1 lemon juice
- Tomato ketchup (optional)
- Black pepper powder
- In a pan, add 1 tbsp oil. Once its hot, add some chopped green chilies and sauté them.
- Add pureed tomato and saute for a little bit.
- Add some salt, 1/4th tsp oregano,1/4th tsp chili flakes 1/2 tsp cumin powder. Mix them well.
- Add boiled beans and partially mash them together. Cover and cook it for 5 mins on low to medium flame.
- Keep it aside to get cool.
- In a grinder mix, handful of mint, handful of coriander leaves, 1/2 green tomato (optional), 1 green chili, some salt and mayo. Grind them together.
- A thick sauce with light green color will be ready.
- In a bowl mix all these ingredients : chopped tomatoes, colorful pepper, corn, onion, some green chilies, a handful of chopped coriander leaves, Avocado, salt, black pepper powder, lemon, oregano and chili flakes.
