Beyond Potatoes

Whenever we talk about Vada Pav or some call it Indian Burger, we imagine about potatoes in a bun but why not make it healthy from inside and let it look all the same from outside. No one even notices any difference and eats with all the same love. So, here I put so many veggies inside. I served it to my guests. They loved it. It is one of my sons favorite too. My guests had just one question that it tasted all same but why color from inside was a little green, when I explained them they were completely surprised about what they ate and how it didn't taste any different.






Ingredients:
  • A cup of spinach leaves
  • A cup of fenugreek leaves
  • A cup of coriander leaves
  • 8-10 mint leaves
  • A grated carrot
  • 1/4th of zucchini grated
  • 2 tbsp of grated cauliflower
  • 2 boiled and mashed potatoes
  • Salt and pepper as per taste
  • Some Chaat masala
For covering:
  • 1and 1/2 cups of besan/ gram flour
  • Salt and pepper as per taste
  • Few pinches of turmeric powder
  • 1/6th tsp of baking soda
  • Oil for frying
  • 6-8 Bun bread
  • Little butter for cooking the bread

Method:






  1. Very finely chop all the green leaves.
  2. Mix all greens, carrots, zucchini, cauliflower, potatoes, salt, pepper and Chaat masala.
  3. Make balls from this mix. Keep them aside.
  4. Mix all the ingredients for covering together. Add little water at a time and make a thick batter.
  5. Dip the veggie balls in this covering mix and fry them.
  6. Pour a butter on a griddle and cook bun breads in it from both sides.
  7. Serve them hot. Put a ball in between two slices of bun bread, sprinkle some green chutney, some red chutney, some chili and garlic powder and serve.
  8. You can eat those veggies vadas as is also.
