Quinoa & vegetables fritters

Quinoa is known as mother of grains because it has more protein than any other grain or seed. Quinoa provides all 9 essential amino acids, making it a complete protein. Its a good way to start your day with protein and vegetable rich entry. And its easy to make as well. Quinoa takes less time to cook in comparison to so many other whole grains and it tastes scrumptious too.



Ingredients:
  • 1 cup cooked quinoa [Wash 1/2 cup of quinoa and cook it for 10-15 mins in 1 & 1/4 cup of water]
  • 1/2 carrot grated
  • Green part of 2 green onions finely chopped
  • 2 potato boiled and mashed [if u eat egg, use 1-2 eggs instead of potato]
  • 1/2 small zucchini/any squash grated
  • 1/4th cup grated cauliflower
  • 2-3 basil leaves very finely chopped 
  • 3-4 mint leaves very finely chopped
  • 1 garlic clove very finely chopped
  • 2 tbsp of fresh grated cheese of your choice [I used Spanish cheese] (its optional)
  • salt as per taste
  • black pepper as per taste
  • 1 green chilly very finely chopped [optional]
  • Some oil for shallow frying
  • Greek yogurt/Hung curd and coriander leaves for serving
Method:
  1. Mix quinoa and everything together other than coriander leaves and Greek yogurt.
  2. Make thin fritters and on a nonstick pan cook them with just few drops of oil.
  3. Cook them until they r golden brown from both sides.
  4. Serve hot with a dollop of Greek yogurt and decorate with green coriander leaves.
