Eggless Vegetable Pancake

Wanna feed vegetables, no wait, actually lots of vegetables to your kids and other non vegetable lovers, that too in one go. No need to wait, here you go. Its pretty simple and quick, Doesn't need lots of preparations and tastes amazing. Kids love it and elders too. Remember more vegetables less flour. Bring out all vegetables you have at home. Grate them, finely chop them, mix them and ready. And you can add any flour. Ok I am going to mention vegetables I used, but don't put limit to that.


Ingredients:

  • 1 Carrot grated
  • 1/2 zucchini grated
  • 1/2 squash grated
  • 1/4 bottle guard grated
  • 1/2 onion finely chopped
  • 1 tomato finely chopped
  • some broccoli and cauliflower finely grated
  • few green chillies finely chopped or red chilli pepper as per taste
  • 10-12 Spinach leaves finely chopped
  • some coriander finely chopped
  • 1/4th cup besan
  • 1/6th cup wheat flour
  • 1/6th cup semolina
  • Salt as per taste
  • Oil 3 spoons or 1/6 tsp soda
  • Turmeric
  • Oil just to drizzle a little on top
  • Water to reach dosa consistency around 1/2 cup [add little more if needed]
Method:
Just mix everything together and form a no lump batter. Pour ladle full on non stick griddle, spread it evenly in circle, drizzle some oil on sides and let it cook. Flip it when u see no wet batter on top. Cook it properly from both sides and serve hot with tomato ketch up.
