Its winter time and we get all fresh green veggies in winter. Its very healthy paratha because I am going to use all green vegetables here. It tastes really good, especially when served with curd. Who doesn't like parathas' when they are served hot in chilling weather. How about a healthy breakfast in this winter season. I know its mouth-watering. So, grab it.

- Wheat flour 1 & 1/2 Cup
- 1/4th Cup Green onions, finely chopped
- 1/4th Cup spinach finely chopped
- 1/4th Cup Methi/Fenugreek leaves finely chopped
- 1/4th Cup of very finely chopped Cabbage
- 3-4 Tbsp of green peas, boiled and mashed
- 2-3 Tbsp of grated Broccoli
- 4 Tbsp of very finely chopped coriander
- 3-4 green chillies very finely chopped or adjust to your taste
- salt as per taste
- 1/4 tsp cumin seed powder
- 3-4 pinches of dry mango powder [Optional]
- Oil 4-5 Tbsp
- Ghee/clarified butter/butter for parathas
- Dry flour to roll parathas
- Water to kneed the dough
Method:
- Mix all vegetables, wheat flour and oil together. Add salt, green chillies, dry mango powder and cumin seed powder and mix them well.
- Kneed the dough by adding very small amount of water at a time. Make a soft, chapati like dough.
- Keep the dough aside for 5-10 minutes.
- After that, make equal portions of dough and divide them in 6-7 parts in circles.
- Heat a skillet/Tawa.
- Dip one portion of dough in dry flour and with the help of rolling pin, roll it in circle.
- Cook it from both sides on hot tawa, adding little butter/clarified butter on both sides, till very small brown patches appear on both sides.
- Serve hot with yogurt.
