Kesari Paneer Recipe

I was thinking to make some new gravy this time with Paneer/Cottage Cheese. My husband called up some members from his office for lunch. Still I was in mood of experiment. So, I just started making a gravy and kept on putting ingredients randomly. I was not sure how it will turn out. While making I was just praying to GOD that it should turn out well because guests are coming up very soon and even I don't have time to make something else. Annnnnnnddddddddddddd, guess what, it turned out soooooooo yummmmyyyyyyyyy... While we all were having our lunch, I was looking at everyone's face. Can somebody please say how it is? Even if it's not good pleas just say it. After 2 minutes or so, they started speaking. Everyone liked it and I took a deep breath. And after 2 or 3 days I came up with the name of recipe as "Kesari Paneer". So, I thought of sharing my creation with all of you and here we go for the recipe.



Serves: 6                                                                                      Time Taken: 30 minute

Ingredients:

  • 75 Gms. Paneer/Cottage Cheese [cut into squares]
  • Few threads of Kesar/Saffron soaked in 2 tbsp. of water
  • 2 tomatoes & 3 green chillies pureed together
  • 5-6 Garlic cloves finely chopped
  • 1 Onion finely chopped
  • 1/2 Tsp of cumin seeds
  • 1/2 Tsp of fresh green cardamom powder
  • Salt as per taste
  • a very little Jaggery/Gaud [Optional]
  • 1/2 Tsp of Garam Masala Powder
  • 1/2 Tsp of Coriander Powder
  • 1/4 Tsp of Turmeric Powder
  • 2 Tbsp of Curd [Mixed well with 3 Tbsp of Water and 2 pinches of chat masala]
  • 3-4 Tbsp of Oil
  • 2 pinches of Asafoetida/Heeng
  • Few Coriander Leaves
Method:
  1. Heat oil in a wok and add cumin seeds, asafoetida, 1/2 of cardamom powder. Cook it for 3-4 seconds and add garlic and onion into it. cook it until onions are very light pink.
  2. Quickly add and mix, salt, turmeric powder and coriander powder.
  3. Add tomato puree mixture and Jaggery into it and cook for 4-5 minutes.
  4. Add Garam masala powder and curd mixture into it and mix well and cook for another 2 minutes.
  5. Add paneer, saffron and rest of cardamom powder into it and mix them lightly. Let it cook for another 2 minutes.
  6. Its ready to serve. Sprinkle coriander leaves on it and serve hot with Chapatis/Parathas.
