Royal Potato Recipe

Potato Royal is a very delicious, yummy appetizer. You can have it as breakfast or an evening appetizer or as a side dish with any main course of the day. Its very easy to make. You can have it as it is or with coriander chutney or with tomato sauce. Choice is yours.


Royal Potato

Ingredients of filling
Ingredients:
  • 3 Medium sized potato's
  • 50 gms. of shredded Paneer/Cottage Cheese/Indian Cheese/Tofu
  • 2 Fried Papad, crushed
  • 3-4 Green Chillies
  • 1 & 1/2 Tsp Ginger Paste
  • 2 Garlic cloves very finely chopped
  • Salt to taste
  • Black Salt to taste
  • 1/4 Cup of Coriander leaves very finely chopped 
  • 1/4th Tsp of Funnel Seeds (Sauff)
  • 1/4th Tsp Coriander powder
  • 1/4th Tsp Aamchur/dry mango Powder
  • 1/4th Tsp Cumin powder
  • 1/4th Tsp Chat Masala
  • 1/2 Cup of oil
  • 5 Tbsp Curd/Yogurt whisked
  • 1/4th Tsp Garam masala powder
  • 1 Tbsp of Besan/Chick Pea Flour
  • Shell Potato
  • Pinch of red chilly powder
Procedure:
  1. Peel the potatoes. Cut them into exact halves. Either vertically/horizontally and scoop the potatoes leaving shell all around.
  2. Heat sufficient oil in a frying pan and fry these potatoes until they are golden brown from outside.
  3. Place them on an absorbent paper, so that extra oil will be absorbed.
  4. Finely chop the scooped out potato. Heat 1-2 Tbsp of oil in a pan. Add garlic and 1 tsp of ginger paste in hot oil. Add chopped potatoes, salt and green chillies. Cook until potatoes are soft.
  5. For stuffing take paneer in a bowl. Add black salt, chat masala, cumin powder,garam masala, coriander leaves, crushed papad, funnel seeds, aamchur powder, coriander powder and chopped cooked potatoes. Mix them.
  6. Stuff the potato shells with paneer mixture. 
    Stuffed Shell Potato
    1. We have to marinade these stuffed potato shells. For this, take curd in a bowl. Add pinch of black salt, pinch of chat masala, pinch of red chilly powder, 1/4th tsp of ginger paste, pinch of coriander powder, pinch of cumin powder and besan. Mix them.
    2. Put these stuffed potatoes in yogurt marinade and mix well with a light hand. Let it rest aside for 30 mins.
    3. Pre-heat the oven at 180 C or 350 Fahrenheit. Greese the baking tray with oil, arrange the stuffed potatoes and bake it for 15-20 minutes.
    4. Serve hot.

      1. Shweta, you can do it either with the help of an ice-cream scooper or with the help of knife. Start from center and go towards outer edges.
