Egg-Less Carrot Cake Recipe


Its Yummy. First time my husband and I had carrot cake and we fall in love with it.

Ingredients:
Carrot Cake (Eggless)
  • 1 Cup of All purpose Flour/Self Raising Flour (Maida)
  • 1/2 Cup of Sugar
  • 1/2 Cup of finely grated carrot
  • 1 Tbsp of Cardemom powder
  • 1 Tsp of Baking Powder
  • 1/4 Tsp of Baking Soda
  • 5 Tbsp of salted melted butter at room temperature (If salted butter is not available, add a pinch of salt)
  • 1/2 Cup of Yoghurt
  • 1/4 Cup of Walnuts (Optional)
  • 2 drops of Vanilla essence
  • 2 Tbsp of Brown Sugar

Method:
1.     First melt the butter for a minute or 1/2 in microwave and keep it aside to cool.
2.     Take a medium bowl. Mix flour, Baking powder, baking soda and cardemom powder very well and keep it aside.
3.     Take a big bowl. Add curd, sugar and brown sugar into it. Mix it until sugar gets melt completely.
4.     Pre-heat the oven at 350 degree Fehrenhite or 180 degree centigrate.
5.     Now continue adding flour mix slowly. Mix well and take care that no lumps form.
6.     After mixing all these very well, add Carrot, walnuts and butter and mix them. 
7.     Greese the cake tray with butter and dry flour.
8.     Pour the cake batter into it.
9.     Put the tray in oven and bake the cake for around 25-30 mins.
10. Apply toothpick test. If toothpick comes out clean from cake then it is done otherwise it is required to bake it for 2-3 more mins.
11. Take it out from oven and keep it aside to get cool for minimum of 30 mins.
